WHere is a home-style version of a beverage featured on a new drinks list. It's a batch prepared mix which is loaded with the essence associated with Christmas time, which makes it ideal for a celebration. Any leftover syrup for brunch beverages, puddings, or to make another batch of this cocktail.
The Bikini Cocktail
Serves 10 people
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Place all the ingredients into a saucepan, bring to a gentle boil, agitating so the sugar melts. Then, remove from the burner and leave to reach room temperature fully. Pour into a sterilised bottle, cap it keeping it in the fridge, where it will keep for up to a month.
Preparing the Premix: Mix every liquids in a big jug, leave to sit for 60 minutes, then strain best through muslin, to ensure it's fully clarified.
When ready to serve: Measure 85ml of the premix to a cocktail shaker filled with ice, and agitate carefully for a minute until cold. Strain into an chilled martini glass or similar, decorate with some cranberries and complete it using a brief mist of mandarin oil over the top.
